一帆风顺---黑椒里脊肉

  • 黑椒汁1.5汤匙
  • 蚝油1汤匙
  • 老抽1汤匙
  • 日式酱油1汤匙
  • 蒜粉1茶匙
  • 半茶匙

Steps to make 一帆风顺---黑椒里脊肉

  • 1.里脊肉清理掉筋膜和肥肉。
  • 2.加入腌料。
  • 3.用手按摩肉2分钟后盖上保鲜膜放入冰箱腌制20-24小时。
  • 4.提前将肉从冰箱拿出回温到室温的温度。(烤箱预热125度),煎锅放入1汤匙黄油烧至冒烟。
  • 5.放入里脊肉煎至表面变色,锁住水分。
  • 6.放入铺了锡纸的烤盘里,将测温针斜插入里脊肉的中部(测温针要插在最厚的那段肉)。
  • 7.放入烤箱烤40-45分钟,至肉的里部温度达到67度。
  • 8.将烤盘从烤箱取出,迅速将锡纸捆包好里脊肉,让余温继续热15-20分钟。之后打开锡纸,稍凉后切片装盘。
