    Steps to make 甜蜜蜜排骨

    • 1.排骨洗净,剁成一寸长的小段。
    • 2.油锅放稍多一点的油,大火烧开。
    • 3.油温至十成热时,下入生姜和排骨,翻抄至断生,加入两勺盐,继续翻炒,将排骨中的水分逼出。
    • 4.将排骨中的水分完全炸干后,一定要炸干,这样排骨才会没有腥涩味。倒入少量料酒,一汤匙老抽,一勺醋,炒匀。
    • 5.加入半锅水,几大块红糖,注意这就是大厨的秘方之一哦,加红糖或者麦芽糖,成菜就会非常红亮。
    • 6.转入高压锅内,大火烧至上汽,改小火闷25分钟。
    • 7.最后再转入炒锅中收干水份,注意水份收到最后时,锅内只剩油和糖,要不停的翻动,让糖浆均匀的裹在排骨上,形成一层油亮的芡汁,起锅时再加入鸡精,胡椒就可以了。
