  • 酸菜一把
  • 猪肉一块
  • 豆干四片
  • 藠头一小把
  • 干辣椒几个
  • 猪油20克
  • 蚝油少量

Steps to make 艾米粿

  • 1.新鲜的艾草清洗干净。
  • 2.锅里倒入适量的水烧开,加入适量的小苏打。
  • 3.再把艾草焯水一下,变软以后捞出过冷水。
  • 4.焯过水的艾草,放入破壁机里,加少量的水打成泥。
  • 5.放入粉里。
  • 6.揉成团,再加入20克猪油继续揉均匀。
  • 7.然后揪小团,上锅蒸熟。
  • 8.一块猪腿肉切丁,肥肉先爆出油。
  • 9.加入瘦肉丁翻炒变色。
  • 10.加入适量的生抽,盐,蚝油,料酒,翻拌均匀。
  • 11.放入豆干,藠头,干辣椒翻炒。
  • 12.入味之后加入酸菜,煮过的春笋笋丁。
  • 13.根据咸淡再适量调味,关火后加入藠头叶。
  • 14.蒸熟的艾草面团颜色比较深,稍微凉一下就倒出。
  • 15.揉成团。
  • 16.搓成条。
  • 17.切适量的面剂,擀成圆片。
  • 18.放上适量的馅。
  • 19.收口。
  • 20.再捏出花边。
