  • 1.羊蹄4个,整理干净,对剖。
  • 2.水开,放些料酒,放下羊蹄焯5分钟。捞出洗净。
  • 3.取砂锅,放些水,放下姜,葱结,八角,桂皮,香叶,辣椒,花椒。
  • 4.放入羊蹄,加一点的醋。
  • 5.放些糖,鲜抽,老抽。
  • 6.大火煮开,小火2个钟头左右。
  • 7.为防止粘锅底,常常要浮动一下。
  • 8.当汁快干时,放些盐,糖,胡椒粉,中火煮3--5分钟。
  • 9.边煮边不停的搅拌,等汁稠时,就OK了。
