  • 温水110克
  • 干酵母5ml
  • 3克
  • 细砂糖25克
  • 蛋黄1个
  • 奶粉10克
  • 黄油30克
  • 全蛋液10ml

Steps to make 黄油卷

  • 1.准备好所有材料。黄油软化。
  • 2.除黄油外所有材料混合。
  • 3.干酵母温水溶解。
  • 4.揉面团。揉出面筋的时候加入软化好的黄油。继续揉,将面团揉到可以拉伸出薄膜的扩展阶段。
  • 5.揉好的面团放入碗里盖上保鲜膜发酵1小时。面团要发酵到原来的2倍大。
  • 6.把发酵好的面团用手按出里面的气体,然后分成8个小团子。室温醒发15分钟。
  • 7.小团子醒发好,先用擀面杖弄椭圆形卷好,再重新擀一遍,宽的那边卷进来。全部弄好后,室温35度发酵,如果烤箱有发酵功能就放烤箱里发酵。大约时间40分钟。
  • 8.发酵好的小卷。
  • 9.用小毛刷在小卷上涂全蛋液。
  • 10.烤箱上下火180度,烤12分钟。
  • 11.快烤好的小卷,表面已经金黄色了。
  • 12.出炉咯!漂亮!
