川味豆瓣鱼

  • 郫县豆瓣酱1匙半
  • 料酒1匙
  • 白糖1小勺
  • 1/4小勺
  • 野山椒1个
  • 淀粉2匙
  • 蕃茄酱1匙
  • 清水半碗

Steps to make 川味豆瓣鱼

  • 1.将鱼洗净切花刀,抹上1/4小勺盐腌着备用。
  • 2.葱姜野山椒洗净切好。
  • 3.上锅入适量油烧热,放入鱼煎至两面金黄熟透。
  • 4.煎至两面金黄盛起。
  • 5.锅里留底油,爆香姜葱野山椒段。
  • 6.放入郫县豆瓣酱炒出红油,再依次加入料酒、白糖炒开。
  • 7.将辅料中的淀粉、蕃茄酱和水在碗中调均,倒入锅里。
  • 8.用小火边煮边搅拌煮至汤汁浓稠即可。
  • 9.将汁料均均的淋入鱼表面完成。
  • 10.成品。
