肉末酸豆角
自打7月入伏以来,持续多天橙色高温天气,让整个世界热的透不气来;还延伸出这样的网络语:出门五分钟,流汗二小时、走在路上摔了一跤,却不小心摔成三级烫伤等等,可见有酷热程度了。
天气炎热容易导致没胃口,此时若来些酸爽开胃小菜,想必是最受欢迎的;夏季吃豇豆的最佳时期,所以我特地买了新鲜豇豆来腌制酸豆角。
豇豆:李时珍称“此豆可菜、可果、可谷,备用最好,乃豆中之上品”;而阿拉伯人常把带病啼当作爱情的象征,小伙子向姑娘求婚,总要带上一把豇豆,新娘子到男家,嫁妆里也有少不了豇豆。
酸豆角腌好了,搭配些猪肉末、再来些蒜瓣、干辣椒一起爆炒;酸、咸、辣、香多种口味于一体,就着米饭吃,真的太香太香了~~~

  • 食盐45克
  • 猪肉150克
  • 豇豆520克
  • 开水1000克
  • 葱末少许
  • 鸡精少许
  • 料酒少许
  • 酱油少许
  • 蒜头5瓣
  • 干辣椒3个

Steps to make 肉末酸豆角

  • 1.提前腌制好酸豆角,再备好其它食材
  • 2.先开始腌制酸豆角:新鲜豇豆抖去浮土后理齐、食盐倒入开水中融化待凉
  • 3.将豇豆绕圈码放在盐水里、水需淹过豇豆,再将装满水的大碗压在豇豆上面
  • 4.底部可加一个大容器以防盐水渗出,放至通风处
  • 5.腌制3~4天后豇豆已由绿色变黄,碗底也逐渐长出白色盐沫
  • 6.腌制到第8天,酸豆角就OK了
  • 7.取出酸豆角清洗干净、摘去两头老梗、再切1CM左右小碎段
  • 8.葱、蒜和干辣椒切沫备用
  • 9.猪肉洗净沥干,再用刀剁成肉沫
  • 10.锅热倒入玉米油,再爆香:葱、蒜和辣椒沫
  • 11.放入剁好的肉沫
  • 12.炒散后滴入少许料酒
  • 13.再倒些六月鲜酱油炒匀
  • 14.倒入酸豆角
  • 15.大火快速翻炒,最后撒些鸡精
  • 16.炒匀后关火
  • 17.盛盘,再来碗米饭
