  • 酵母5g(酵头)
  • 高粉355g(主面团)
  • 低粉32g(主面团)
  • 20g(主面团)
  • 6g(主面团)
  • 椰浆50g(主面团)
  • 黄油30g(主面团)
  • 肉松50g

Steps to make 奶酪肉松排包(中种法)

  • 1.(酵头)酵母在牛奶中化开,加入高粉揉匀成团
  • 2.(酵头)温暖处发酵5小时或3-4倍大
  • 3.(主面团)除黄油外,主面团的所有他材料混合成棉絮状
  • 4.(主面团)倒入面包机内,酵头撕块加入,选择“IMIX”程序
  • 5.(主面团)程序结束后加黄油,再继续一个“IMIX”程序
  • 6.取出揉圆排气,分成10等份(约70g),小面团滚圆静置1分钟
  • 7.把小面团擀成长形
  • 8.反过来,卷成长条,整齐排入深盘中,盖保鲜膜发酵至2倍大
  • 9.准备好奶酪碎和肉松
  • 10.半小时过去,面团已经发酵好了
  • 11.在表面先撒上芝士碎,再撒上肉松
  • 12.送进预热好的烤箱中,中层,上下火160℃,20-25分钟
