酸菜鱼可以说是川菜里的名菜,去川菜馆子一般都会点这道菜。
这道菜在家也可以轻松做。超市里有现成的酸菜买回来,再买一条鱼就可以了。一般用草鱼、鲤鱼都可以,
也可以选择鱼刺比较少的龙利鱼、鮰鱼。

  • 香葱15克
  • 花椒8克
  • 干辣椒10克
  • 生姜5克
  • 料酒2汤匙
  • 胡椒粉5克
  • 1克

Steps to make 酸菜鱼

  • 1.清洗干净鱼块。
  • 2.将鱼块片成片备用。
  • 3.将鱼片放入大碗中,加入少许盐、胡椒粉、生姜末、料酒抓匀码味。
  • 4.准备酸菜,将酸菜反复清洗。
  • 5.将酸菜切段用清水浸泡备用。
  • 6.准备西红柿。
  • 7.炒锅加油,小火爆香葱、姜、蒜、干辣椒、花椒。
  • 8.下入酸菜西红柿煸炒。
  • 9.加入适量开水或者骨头汤煮开,加入胡椒粉。
  • 10.将鱼片一片片下入锅中,大火烧开,撇去浮沫。
  • 11.开中火,见鱼片变白,汤汁稍微沸腾后即可。
  • 12.将汤和鱼片一起小心倒在碗里。
  • 13.将香葱切末。香菜切末。
  • 14.另起锅,锅里放油大火烧冒青烟。
  • 15.将热油浇在鱼片上即可。
