    Steps to make 苏北农家菜——茄子镶肉

    • 1.准备好的料。
    • 2.茄子洗净,用刀从上面剖开成片状至蒂部不要弄断。
    • 3.猪肉用刀剁成肉酱。
    • 4.生姜,葱剁碎。
    • 5.把肉酱,姜末,葱末,料酒,鸡精,盐,鸡蛋和在一起,搅拌上劲。
    • 6.把做好的肉酱塞到茄子片中间。
    • 7.全部塞满后用棉线把茄子绑好。
    • 8.热锅冷油,煸香姜片。
    • 9.把茄子放进两面煎一下。
    • 10.加点生抽,鸡精,料酒,水(稍微多点)烧开,改中火炖20分钟左右。
    • 11.加点盐,改大火收掉点汁水就可以,并且在收汁的过程中把汤汁用勺不停的淋在茄子上使茄子更入味。
