老宁波风味熏鱼

  • 茴香少许

Steps to make 老宁波风味熏鱼

  • 1.鱼去除鱼鳞,内脏和鳃,洗净擦干,切成1厘米左右厚的鱼片
  • 2.加入适量酱油,黄酒,少许糖,黑胡椒碎和葱姜(葱姜忘记拍了)腌制一小时
  • 3.腌制好的鱼片晾干,锅里倒入油,放入鱼片
  • 4.鱼片炸至颜色变深,捞出控油(我炸得还不是特别透,可以再炸一会)
  • 5.锅中油倒掉,加入桂皮,茴香,花椒,少许酱油,黄酒和水
  • 6.煮一会加入适量冰糖,尝一下味道,调整一下(不要太咸了)
  • 7.等到锅里汤汁变得微微粘稠即可关火,捞出汤汁里的香料,将汤汁趁热倒在炸好的鱼上
