萨斯肯
锡伯族的“萨斯肯”,是一种传统风味的炖菜。由牛肉、土豆、白菜、干豆角、胡萝卜等食材先炒后炖的特色炖菜,最后配些青、红辣椒用以点缀。这道菜与我们的大杂烩有异曲同工之处,菜品搭配的营养丰富,颜色亮丽。

新疆的锡伯族是18世纪中叶,清朝政府从沈阳等地征调锡伯族官兵1018人和他们的家属共3275人,由满族官员率领,农历四月十八日,经过一年零五个月的艰苦跋涉,到达新疆的伊犁地区进行屯垦戍边。所以每年农历四月十八日是锡伯族的西迁节。疆的锡伯族都将隆重开展各种纪念活动,并把这一天定为自己的传统节日。 现多数居住在新疆察布查尔锡伯自治县和霍城、巩留等县。

牛肉有补中益气,滋养脾胃,强健筋骨,化痰息风,止渴止涎之功效,适宜于中气下隐、气短体虚、筋骨酸软、贫血久病及面黄目眩之人食用;寒冬食牛肉可暖胃,是该季节的补益佳品

    Steps to make 萨斯肯

    • 1.食材:牛肉 土豆 干豇豆 青红辣椒 白菜 植物油 盐 胡萝卜 植物油 鸡精 姜 料酒 豆瓣酱 酱油
    • 2.把干豇豆用热水泡软
    • 3.牛肉洗净切块
    • 4.把土豆胡萝卜洗净去皮切块
    • 5.白菜洗净切块,青红辣椒姜洗净切块
    • 6.热锅凉油加姜牛肉块一起翻炒
    • 7.加料酒酱油豆瓣酱
    • 8.翻炒均匀
    • 9.加水干豇豆大火烧开转小火炖20分钟左右
    • 10.加土豆和胡萝卜盐一起炖20分钟左右炖到牛肉和那些食材快熟时,加白菜一起炖5分钟左右
    • 11.加青红辣椒鸡精大火收汁尝味出锅
