桂花糖芋艿
今天准备做桂花糖芋艿,它是一道南京的著名传统甜点,也是南京最有人情味的街头小食。我先把芋艿清洗干净后,放入臻米脱糖电饭煲的内胆中蒸一下,这次蒸主要是为了剥去它的外皮,所以不用蒸软。蒸过的芋艿很轻松就能剥皮,把剥好的芋艿切成小块后,再放入电饭煲的不锈钢内胆中加水加红糖、冰糖一起炖煮。

Steps to make 桂花糖芋艿

  • 1.菜场买回的芋艿用清水清洗干净,我用的牙刷来刷的
  • 2.在臻米脱糖电饭煲的食品级304不锈钢材质内胆中加入600ML清水,放入配套的大滤网
  • 3.把洗干净的芋艿放在大滤网上
  • 4.按下“蒸菜”键,常规是25分钟,可以通过“+、-”键来调整时间,我把时间减到15分钟
  • 5.时间到,这是蒸好的芋艿,因为还要炖煮,所以没有彻底蒸软
  • 6.把芋艿的外皮剥掉,冲洗一下,友情提醒最好戴上手套
  • 7.把剥了皮的芋艿切成滚刀块,大小要均匀
  • 8.臻米脱糖电饭煲的不锈钢内胆中重新加入适量清水、冰糖、红糖和少许食用碱面搅匀
  • 9.接着加入切小的芋艿块
  • 10.选择“汤粥”键,开始炖煮,我炖了20分钟左右,用筷子试了一下能轻松穿过即可
  • 11.取一小碗,倒入适量藕粉
  • 12.加入少许冷开水,先把藕粉化开
  • 13.接着把化开的藕粉倒入糖水芋艿中
  • 14.用勺子轻轻搅拌均匀,看到红糖水开始变浓稠有光泽,即可关掉电源
  • 15.出锅装碗,可以加点糖桂花酱,再撒上少许干桂花即可享用了。
