果干香酥粒面包
好长时间没折腾面包,一直苦于手工揉面太累不敢再尝试,突然想试试家里的面点机能不能胜任这一功能呢,说干就干,还真别说,成功了......,心里这个小兴奋呦,以后我家宝贝又可以吃妈妈做的面包了!这款面包松软可口,添加了酸甜的果干和香酥粒真是好吃啊.....

  • 细砂糖48克
  • 全蛋液48克
  • 牛奶160克
  • 5克
  • 黄油30克
  • 酵母4克
  • 黄油15克
  • 砂糖15克
  • 低筋面粉35克

Steps to make 果干香酥粒面包

  • 1.面点机外桶加水到水位线,内桶加入面团配料里除了黄油以外的所有食材,盖好盖子,启动和面程序
  • 2.面团越来越光滑
  • 3.一个和面程序结束时加入室温软化的黄油,开启和面发面功能
  • 4.20分钟的时候面团能拉出膜,不做土司这个状态就可以了。盖上盖子进入发酵功能
  • 5.面团发酵到原来的两倍大,戳下去不塌陷不回缩即可
  • 6.面案上抹少许油防粘,面团取出排气,松弛15分钟
  • 7.切成每个76克左右的面团,共8个,搓长
  • 8.擀薄,撒果干和少许砂糖(不喜欢甜的这一步的砂糖省略)
  • 9.卷起,收口处封好
  • 10.排入圆模中,中间留空隙面包卷立起来排列,封上保鲜膜,温暖处发酵
  • 11.香酥粒做法:低粉、砂糖、室温软化黄油放在一起
  • 12.混合均匀后搓粒即可
  • 13.面团发到2到2.5倍大
  • 14.刷上全蛋液(我这个刷多了,成品颜色很深)
  • 15.撒上香酥粒,入提前预热好的烤箱,170度,中层,20~25分钟。
