剁椒炖带鱼
这次的蔬菜礼盒里面还有新侬的新产品,新侬生态带鱼,这带鱼一看就很新鲜,鱼鳞颜色银白而且一点都没掉,真不错。今天做了个剁椒炖带鱼,剁椒还是入冬时自己做的,一直没怎么吃,因为他不吃辣的,所以只能趁他不在家吃饭时我才用,消耗的就慢多了,今天他说不回来吃饭,我正好做个辣的解解馋哈哈。
品尝了剁椒炖带鱼,我感觉这两样还挺搭的,带鱼的腥气吃不出来了,而且我自己做的剁椒也不是很辣,很符合我的口味,如果喜欢辣的同学就用自己喜欢的辣酱即可,总之这道菜不光颜色好看,吃起来也很美味的。

  • 干葱100g

  • 生抽10g
  • 蚝油10g
  • 小葱末10g
  • 自制剁椒酱50g
  • 蛋清一个
  • 干淀粉30g
  • 2g
  • 花椒3g
  • 黄酒25g
  • 清水300ml

Steps to make 剁椒炖带鱼

  • 1.首先准备好食材:新侬生态带鱼、干葱、小葱末、姜、蒜和自制剁椒酱。
  • 2.带鱼去掉袋子用冷水浸泡解冻后去掉内脏剪掉鱼鳍清洗干净控干水分。
  • 3.然后将带鱼切小段在鱼身上切菱形花刀(再将干葱切小块,姜切丝一部分切末一部分,大蒜切末备用,这一步忘了拍。)
  • 4.将鱼段、姜丝和花椒放入盆中,再加入2克盐。
  • 5.加入25克黄酒搅拌几下腌制半小时。
  • 6.腌制好的带鱼去掉调料擦干鱼身,然后蘸完蛋清再蘸满干淀粉。
  • 7.放入热油锅中炸
  • 8.炸到两面金黄就拣出来备用。
  • 9.另起一炒锅烧热后加入玉米油,然后下入切好的干葱煸炒。
  • 10.待干葱煸炒到稍微发黄就加入姜蒜末
  • 11.再加入自制剁椒酱煸炒一会儿
  • 12.加入10克生抽
  • 13.再加10克蚝油
  • 14.加入300毫升清水
  • 15.开锅后下入炸好的带鱼,盖盖子炖十分钟左右。
  • 16.看到汤汁粘稠就撒上小葱末出锅开吃!
