  • 干豆腐200g

Steps to make 水煮黑鱼片

  • 1.黑鱼。
  • 2.黄豆芽洗净摘去根部。
  • 3.蒜取蒜白部分切段,酸菜、干豆腐、姜丝。
  • 4.水煮酱料,不敢用太多,怕辣,够味就行。
  • 5.泡椒、葱花。
  • 6.先把鱼切成蝴蝶片,就是一刀切下去不能断,第二刀才切断,好处就是易熟而且吃不到骨刺。
  • 7.先放盐、胡椒粉、淀粉、几滴白酒腌制15分钟。
  • 8.先炒豆芽。
  • 9.炒好放盆底。
  • 10.炒豆干。
  • 11.炒好放豆芽面上。
  • 12.炒蒜白。
  • 13.依次铲入盆中。
  • 14.炒酸菜,先爆姜丝再下酸菜。
  • 15.炒香加水煮5分钟。
  • 16.捞起。
  • 17.放入盆中。
  • 18.锅里煮了酸菜的汤汁保留,放入水煮酱料。
  • 19.放点白醋,增加酸味,提高口感。
  • 20.再加一匙白糖。
  • 21.小火,一片片鱼肉放入汤汁中。
  • 22.全部鱼片放入开大火,鱼肉一转白色立即出锅,倒入菜盆内。
  • 23.起油锅炒泡椒,放点水、酱油、鸡精、葱花铲入鱼片表面。
  • 24.在鱼片表面再浇一层热油,就大功告成。
