做月饼迎中秋——【苏式鲜肉月饼】
中秋节还没过,这月饼做了好几种了,传统的五仁月饼、白莲蓉月饼、还有冰皮月饼,都一一尝试了,看到大家做的苏式鲜肉月饼,说实话,我们北方没有吃过这种月饼,其实叫它月饼,感觉就是酥皮馅饼啊,哈哈甭管怎样,咱也做做试试吧,本地没有卖的,咱自己做出来品尝一下也行,也不枉过个十五啊。

酥皮的做过老婆饼,全家都很喜欢吃,这个是什么味道呢?早晨烤出来的时候,忍不住尝了一口,还行,尤其那个酥皮很酥很酥,一碰掉渣渣,中午给儿子送了几个,还没反馈回来好不好吃呢,其实玩烘培的乐趣并不在于吃了多少,关键在于享受这个过程,我现在终于明白了,当初老公说的钓鱼的乐趣在于钓的过程。

  • 水油皮:猪油30克

  • 油酥:面粉100克
  • 油酥:猪油50克
  • 肉馅:150克
  • 葱姜末少许
  • 酱油少许

  • 胡椒粉少许
  • 料酒少许

  • 1.油皮的材料放入盆里
  • 2.油酥的材料放入盆里
  • 3.分别揉成团,盖保鲜膜静置30分钟(油皮揉的时候很沾手,可以摔,直到揉出透明的膜)
  • 4.分别分成8等份
  • 5.取一个油皮摁扁放入油酥面团
  • 6.油皮包油酥包好后收口捏紧
  • 7.然后擀成长椭圆形
  • 8.翻面自上而下卷起来
  • 9.卷好的卷反转90度后再擀长
  • 10.然后再卷起来
  • 11.都卷好后盖膜醒发15分钟
  • 12.肉馅加入所有的调料搅拌均匀
  • 13.醒发好的面卷擀成圆形
  • 14.取适量的肉馅放入皮中包起来
  • 15.包好后收口向下放入铺油纸的烤盘内,稍稍压扁
  • 16.表面刷蛋液后撒少许芝麻
