  • 1.准备食材,猪蹄洗干净,切好了,还有泡了一夜的雪豆
  • 2.锅内加水加入料酒,煮猪蹄,去腥味和血
  • 3.锅内会附上白沫子,要拿勺子掠去
  • 4.掠去白沫的猪蹄,煮20分钟,煮好捞出备用
  • 5.锅中加油开始炸煮好的猪蹄子
  • 6.炸制金黄出锅备用
  • 7.葱姜蒜切好,八角,干辣椒,桂皮,陈皮备用
  • 8.锅内留少许油,把葱姜蒜超香
  • 9.把炸好的猪蹄开始炒
  • 10.炒出香味以后,加入冰糖一把,二十三香,生抽,老抽,鸡精,料酒,蚝油,开始翻炒
  • 11.加花椒水和雪碧没过猪蹄,加入干辣椒,八角,桂皮,陈皮,山药片
  • 12.炖到剩下三分之二的水时候,加入泡好的雪豆,开始炖,开小火,炖一个小时,中间加一次水,在家一次生抽,加加一勺盐巴,料酒,继续炖
  • 13.直到收汁为止
  • 14.炖好出锅,加上葱段和辣椒段
