糯米纸杯蛋糕

Steps to make 糯米纸杯蛋糕

  • 1.先将纸杯排放在烤盘中
  • 2.盆中放入3个鸡蛋黄、15g糖、20g玉米油、1g盐和50g水备用
  • 3.鸡蛋清放入无油无水的面盆里
  • 4.用电动打蛋器将蛋清打散后,滴入几滴柠檬去腥(白醋也可以)
  • 5.低速打至低泡状态倒入1/3的糖
  • 6.中速打至细泡时,再次加入一半的糖
  • 7.然后继续中速打发至较稠状态,将糖全部倒入
  • 8.用高速打发至硬性发泡,将打蛋器提起后会出现俩尖角即可
  • 9.备好糯米粉和低筋面粉
  • 10.将步骤1里的食材打散搅匀
  • 11.筛入粉类
  • 12.乱方向搅拌均匀,以免起筋(注意:先把面粉搅拌到没有干粉的状态再开启打蛋器搅拌,否则面粉会飞的到处都是)
  • 13.将三分之一的蛋白霜放进蛋黄糊里切拌式搅拌(从1点的位置划到8点的位置),千万别划圈,那样会消泡的
  • 14.拌均匀后再倒回剩余的蛋白霜里继续切拌
  • 15.拌到没有颗粒,面糊比较细腻即可
  • 16.将拌匀的面糊倒到量杯中(也可以倒入裱花袋中)
  • 17.再倒入纸杯中,7-8分满就可以了
  • 18.烤箱上下火160度预热,烤盘放中层烤制30分钟左右即可
  • 19.烤好取出散热就可以开吃啦!
