烫面葱花饼
烫面饼,顾名思义,就是使用开水和面而后制成的一种饼。可以抹上不同的馅料,造好型,然后用平底锅或电饼铛烙出来。口味可以做成咸味的,使用葱花、肉馅、椒盐等做馅;也可以做成甜味的,使用香蕉、榴莲、豆沙、芝麻等做馅。

Steps to make 烫面葱花饼

  • 1.把面粉放入合适的容器。将烧好的开水一点点倒入面粉,并用筷子不停搅拌,直到盆底无干粉。盖上盖子,等面粉变凉。开水一定要一点点倒进面粉,这样面粉可以一点点将水分吃进去,而不会出现水放多的情况。
  • 2.将面粉揉成团以后,放入容器里,盖上盖子,饧20分钟。
  • 3.饧面期间,将葱洗净切成葱花。
  • 4.面饧好后,再揉上几分钟,如果面太软粘手的话,可以适量加一点干粉,或在面团抹上一些植物油都可以。
  • 5.面团分割成五等分。两面抹上油待用。
  • 6.案板抹上油,取一块面团,擀成牛舌状,抹上一层油。
  • 7.抹上少许盐和花椒面,不喜欢花椒面的人,可以把花椒粉去掉。
  • 8.撒上葱花。
  • 9.从里往外卷,一边卷一边往外搓。
  • 10.卷好后搓长的样子。
  • 11.再把长条状从其中一头卷起来。
  • 12.卷好的饼坯。两面抹上植物油。
  • 13.将饼坯压扁,擀薄。
  • 14.锅里放入适量的植物油,中小火将两面烙黄即可。
  • 15.烙好的饼。
  • 16.成品图。
