橙香蛋糕卷
最近刚入手了奈瓷陶瓷刀,粉嫩粉嫩的,于是开光做了这个橙香蛋糕卷。真的是超级轻便,好用啊,不光是用来去皮、切片还是当面包刀用完全无压力啊。用好工具做美食,心情都美美的。

Details of ingredients

  • 橙子4个
  • 蛋黄80g
  • 白糖30g
  • 橙汁60g
  • 玉米油50g
  • 低粉80g
  • 蛋白160g
  • 白糖10g
  • 冰糖150g
  • 少许
  • 淡奶油150g
  • 蓝莓果酱2勺

Steps to make 橙香蛋糕卷

  • 1.橙子先加盐搓洗干净
  • 2.浸泡十分钟后取出擦干
  • 3.切薄片,尽可能的薄切均匀
  • 4.然后把橙子片加水,盖过橙子片即可,加入冰糖,煮20分钟后放凉,浸泡一夜,第二天用
  • 5.剩下的橙子去皮去果肉榨汁
  • 6.过滤出橙汁备用
  • 7.蛋黄80g加入白糖30g搅打至颜色略发白
  • 8.加入橙汁60g 筛入低粉80g拌匀、玉米油、50g拌匀
  • 9.筛入低粉80g拌匀
  • 10.橙子片取出后吸掉表面的水份,一定要吸干
  • 11.放入装了油纸的烤盘中,如图
  • 12.蛋白160g分次加30g白糖打发到弯勾状态
  • 13.三分之一入蛋黄糊中切拌匀
  • 14.反倒入蛋白糊中切拌匀
  • 15.倒入烤盘中刮平表面,震两下,送入烤箱,175度,20-25分钟,大概23分钟就可以,我的略久了一点点
  • 16.淡奶油150g加10g白糖打发,加入2小勺蓝莓果酱拌匀
  • 17.蛋糕卷取出后撕去油纸,倒扣放凉,用陶瓷刀切去边缘
  • 18.均匀抹上奶油馅
  • 19.卷起,冰箱定型半小时,吃的时候切块即可。陶瓷刀切完全无压力,可以取代面包刀
