中秋节·就吃蔓越莓苦荞月饼!
明月几时有,把酒问青天,不知天上宫阙,今夕是何年。
中秋节吃月饼以示“团圆”。月饼,又叫胡饼、宫饼、月团、丰收饼、团圆饼等,是古代中秋祭拜月神的供品。“八月十五月儿圆,中秋月饼香又甜”,这句名谚道出中秋之夜城乡人民吃月饼的习俗。月饼最初是用来祭奉月神的祭品,后来人们逐渐把中秋赏月与品尝月饼,作为家人团圆的一大象征,慢慢的,月饼也就成为了节日的必备礼品。而我们现在买到的月饼偏甜,热量极高,很多人开始自己在家制作月饼,从营养的角度出发,重点在于选料,雁门清高的苦荞粉本身就是药食两用的食材,从其生长环境到加工工艺,增加月饼的口感,更能提供人体所需营养,今天我们制作蔓越莓苦荞月饼。

  • 苦荞粉10克
  • 去皮绿豆500克
  • 蔓越莓50克
  • 豆沙30克
  • 酵母0.5克
  • 黄油130克
  • 100克
  • 蜂蜜1勺
  • 4克

Steps to make 中秋节·就吃蔓越莓苦荞月饼!

  • 1.绿豆洗净,加适量清水泡一夜;
  • 2. 将苦荞粉和低筋面粉按照1:4的比例混合,加入酵母,活成面团,醒发20分钟至两倍大;
  • 3.用高压锅压14分钟至软烂。(水不宜过多,确保煮出来的成果跟平日的干饭一样),用大勺将煮好的绿豆压成泥;
  • 4.黄油入锅加热融化,将绿豆泥放入小火翻炒至略干,随后再加入蜂蜜和白糖继续翻炒,小火翻炒至捏成团即可;
  • 5.将绿豆泥慢慢和入面团中,揉至光滑,没有疙瘩,蔓越莓切碎后,取一团面团,少许蔓越莓,揉合至面饼形状,放入豆沙,紧口后,揉成光滑的圆团;
  • 6.放入模具,压实,塑性;
  • 7.烤箱200度预热后,放入烤箱烤制饼成微黄色取出,冷却后即可食用喽。
