吉庆有余---模仿新疆大盘鸡
春节马上就要临近了,在这里预祝论坛里的兄弟姐妹们,2014年合家幸福安康,2014马上有钱花啊!
春节单位搞福利,购置了些米面鱼虾副食品,其中还有一只活着的大公鸡!拿到菜市场请卖鸡的帮着杀了,满手的鸡屎味。师父说是好鸡,真的笨鸡。

  • 土豆2个
  • 青尖椒4个
  • 干红辣椒5个
  • 冰糖5粒

Steps to make 吉庆有余---模仿新疆大盘鸡

  • 1.将整鸡洗净拔掉余毛
  • 2.剁成块,放开水锅里汆一下,肉收紧时捞出
  • 3.用自来水冲洗掉浮沫
  • 4.炒锅放适量的植物油,放入花椒爆香
  • 5.将鸡肉倒入快速翻炒一下
  • 6.倒上适量的老抽着色,放上葱姜干辣椒等其他作料翻炒
  • 7.倒入适量的料酒,在翻炒入味
  • 8.加入适量的水,没过鸡肉为宜
  • 9.放上配方里的冰糖,大火煮开后改小火慢炖
  • 10.大约40分钟后汤汁减少了一半,加入少许的盐直到炖熟
  • 11.鸡肉炖熟了立即盛出放在容器里待用
  • 12.将土豆去皮切成5mm的片,青椒切成滚刀块
  • 13.起锅放适量的油,加入几粒葱节
  • 14.将土豆片放入煎一下不一会土豆就会变色,若粘锅可以适时加入点清水直到土豆变色
  • 15.将鸡肉放进锅里,与土豆一起炖至土豆熟了
  • 16.这个时候放上青椒块,翻拌均匀,青椒变色即可盛出装盘
