免火再煮锅菜谱之——红焖羊肉
快过年了,亲戚送来了自家养的羊。这可是绿色食品啊,得好好做,要不就可惜了。
还是决定用我的宝贝——免火再煮锅来烹制这道大餐。

Steps to make 免火再煮锅菜谱之——红焖羊肉

  • 1.羊腿洗净,去除肥油、筋膜,羊肉切成小块。
  • 2.白萝卜、土豆切块;香葱切段、姜、蒜切片。
  • 3.羊肉块和骨头冷水下锅,煮开焯一下,捞出;洗干净、控干备用。
  • 4.锅中倒入色拉油,烧热,加入葱段、姜片、蒜片炒出香味。
  • 5.加入羊肉块和骨头翻炒。
  • 6.加入花椒水、料酒、生抽、蚝油、红糖翻炒至羊肉上色。
  • 7.倒入清水没过羊肉(如果不想汤汁太多就倒水至羊肉2/3处),加入红辣椒、大料、桂皮、香叶、红枣、枸杞。
  • 8.所有材料倒入免火再煮锅内胆,内胆置于火上煮沸,盖好内胆的盖子,再接着煮20分钟;20分钟后加入白萝卜块和土豆块,加适量盐,煮开后立即关火。
  • 9.内胆离火,放入外壳中扣好,盖好盖子。把锅放在安全的地方,余热继续加热半小时,这时一定不要用手触摸外壳,会很烫。30分钟后羊肉就炖好了,3个小时以内食用都还是热乎乎、香喷喷滴!
