    为了满足儿子的小小要求,开始在网上搜制作月饼的工具和材料,然后也查看了一下大家制作月饼的方子,仔细一看,如果不自己制作馅料,做起来应该没什么难度,只是出来的味道和效果如何暂时不知道。
    既然想学习做月饼,当然希望是一切东西都自己亲手做更安全和健康。第一步就是学习熬制糖浆。上上周去超市买了白沙糖加新鲜柠檬,回家后就开始按大家介绍的方法熬制糖浆,不知是火候没把握好还是那个环节出问题,熬制出来的糖浆过硬。第一次试验糖浆没成功,不敢轻易动手尝试炒莲蓉,决定先用现成的馅料搭配起来把月饼做成功后再找机会去尝试馅料的制作方法,如果用现成的馅料连月饼都做不成功,孩子肯定会非常失望。抱着此想法前天晚上第一次动手尝试做月饼,第一次做了10个,非常成功,小朋友一人吃了4个还闲少,这两天不停地吵着还要吃月饼,看来老妈做的月饼深受儿子的喜爱。

  • 1.准备村料:10个饼皮:中筋面粉100克,奶粉5克,转化糖浆75克,枧水1克,香油25克馅料:莲蓉350克、肉松50克
  • 2.将转化糖浆倒入盆中,加入枧水、香油搅拌均匀。面粉和奶粉筛入步骤1中,用刮刀拌均匀,盖上保鲜膜或锅盖静置半小时左右
  • 3.莲蓉350克、肉松50克
  • 4.静置面皮的过程中开始准备馅料,莲蓉和肉松用手拌均匀,分成40克/个(共10个),用手揉圆形备用
  • 5.面团静置好后,分成20克/个(共10个)的面团
  • 6.面团压扁,轻轻用擀面杖稍压一下,然后放上准备好的馅,再将面团放左手,手指按住面皮底部,右手慢慢让它往四周轻轻推,使面皮慢慢全部包裹住馅即可
  • 7.包好的月饼面团放入模具做出月饼饼坯,烤箱190度上下火预热10分钟,放入中上层烤5分钟后拿出烤箱
  • 8.用刷子轻轻往月饼表面刷一层蛋黄水,刷完后再入烤箱,烤13分钟左右即可。
