Steps to make 剁椒鱼头

  • 1.将花鲢鱼头清理干净,加1茶匙盐、2勺料酒,里外抹匀,腌制半天以上,然后,用清水冲洗干净(以前我是不洗的,这招跟丝丝学的,据说去腥效果好)。
  • 2.准备一小碗,倒入3大勺蚝油、3大勺蒸鱼豉油、1小茶匙盐、1小茶匙鸡精,调匀,制作调味汁。
  • 3.准备好葱姜蒜碎、香菜。
  • 4.放处理好的鱼头放入蒸盘上,将郫县豆瓣酱放在鱼头。
  • 5.将剁椒放上。
  • 6.将制作好的调味汁倒在鱼头上。
  • 7.放入葱姜蒜碎。
  • 8.将鱼头放入蒸锅中,大火蒸十五分钟。
  • 9.将香菜放入,虚蒸一分钟,即可出锅。
