蛋杯布丁--来杯焦糖味
方子来自小岛老师,略有改动。
奶油多一点就喜欢折腾这一杯,很好吃。
不喜焦糖的可以不加。

  • 牛奶460g
  • 淡奶油40g
  • 细砂糖65g
  • 全蛋150g
  • 蛋黄40g
  • 细砂糖60g
  • 热水40g

Steps to make 蛋杯布丁--来杯焦糖味

  • 1.布丁杯,放入冷水中,水开后煮10分钟。取出置架上晾干水份。
  • 2.细砂糖入锅,中火加热至浆状,颜色变红 关小火
  • 3.液体沸腾变成茶色后,转动锅子使糖色均匀,关火。迅速倒入热水快速搅拌。(测试焦糖,取一盆水,滴入几滴焦糖液,迅速凝固即可)将焦糖液迅速分装倒入杯底。
  • 4.牛奶+淡奶油+细砂糖 加热至糖溶化(约40度左右)
  • 5.全蛋+蛋黄 左右来回大幅充分搅打均匀
  • 6.牛奶液凉至微温后 和蛋液混合,滴入香草精,将布丁液过筛两次,撇去气泡
  • 7.分装入各杯中,入烤盘,再往烤盘中注入50℃的温水,约1.5cm高。
  • 8.送入预热150℃的烤箱,烤1小时。
