  • 南瓜泥70克
  • 鸡蛋液25克
  • 酵母3克
  • 细砂糖30克
  • 盐粉3克
  • 自制红豆沙馅200克

Steps to make 红豆沙南瓜面包

  • 1.240克高筋面粉倒入和面盆,加入70克蒸熟晾凉过筛好的南瓜泥、10克奶粉、25克鸡蛋液、30克细砂糖、3克酵母、3克盐粉;25克黄油室温软化备用,80克清水备用
  • 2.用筷子把和面盆里的所有材料搅匀
  • 3.加入清水搅匀抓成团
  • 4.把面团移至揉面垫开始揉面
  • 5.可以用轻摔的手法加快面团的起筋
  • 6.十分钟后出现厚膜
  • 7.这时加入已经软化的25克黄油继续揉
  • 8.当面团揉至可以拉出薄膜即可,大概用时十分钟
  • 9.收圆
  • 10.盖上保鲜膜和湿布进行发酵
  • 11.这时可以分好红豆沙陷备用,25克一个,一共八个
  • 12.一个小时后面团发酵至1.5倍大
  • 13.排气分成八等份滚圆松弛15分钟
  • 14.松弛后取一个面团压扁用擀面杖擀开
  • 15.放上红豆沙陷包好,收口朝下
  • 16.取4条28厘米长的棉线排出米字形
  • 17.将包好的面团放中米字中心位置后提起
  • 18.扎好,记得不要扎太紧
  • 19.进行二次发酵
  • 20.40分钟后涨至1倍大即可
  • 21.烤箱上下火180度预热后放入中层烤制20分钟
  • 22.出炉晾凉
  • 23.轻轻的把所有的棉线解掉
  • 24.插上小饼干棍即可
