绿豆沙蜜豆月饼

Steps to make 绿豆沙蜜豆月饼

  • 1.将月饼粉与将转化糖浆、花生油混合,戴上一次性手套,抓匀成团,盖上保鲜膜醒发30分钟。
  • 2.把绿豆沙分成25克一个圆球,共分了26份。
  • 3.再把醒发好的面皮材料,称重分份,每份25克。
  • 4.蜜豆倒入盘中备用。
  • 5.取一个绿豆沙球用大指按一下,呈现如图形状。
  • 6.中间包上蜜豆,每份包15克。
  • 7.这样馅料就是40克一个,捏圆备用。
  • 8.月饼皮用手按扁,中间包上揉好的绿豆沙蜜豆球,面皮比较软,所以要慢慢轻轻地用虎口往上推面皮,将其内馅包住。
  • 9.月饼模具为了防粘,可以用少许月饼粉沾一下,然后把包好的月饼球放置其中。
  • 10.在不粘烤盘上压出图案,再移去月饼模具,动作要小心,别碰到其它的月饼,会影响外型美观的,。
  • 11.再用小喷壶在做好的月饼上喷少许水。
  • 12.烤箱预热,180度,上下火,中层,先烤5分钟定型。
  • 13.取出刷上全蛋液,要薄薄的一层,这样烤出来的月饼才图案清晰,上色美观。
  • 14.烤箱上下火,中层继续烤15分钟出炉,出炉晾凉,凉透了再密封保存等待回油,大约2到3天就可以品尝了。
