美味蛋糕新吃法---【舒芙蕾蛋糕卷】

  • 高粉12克
  • 牛奶60克
  • 鸡蛋50克
  • 蛋黄45克
  • 蛋白105克
  • 砂糖70克

  • 1.黄油放入奶锅中小火加热至融合后取下
  • 2.加入过筛后的高粉+低粉(52克)
  • 3.搅拌均匀
  • 4.分次加入牛奶(牛奶加热到50度,我是放微波炉加热20秒温热的不知道是多少度)
  • 5.搅拌均匀
  • 6.蛋液搅拌均匀
  • 7.分次加入到黄油糊中
  • 8.搅拌均匀
  • 9.搅拌均匀后过筛备用
  • 10.将蛋清分次加入70克白糖打发至硬性发泡
  • 11.取三分之一的蛋白加入黄油糊中
  • 12.翻拌均匀
  • 13.再倒回到蛋白糊中
  • 14.上下翻拌均匀
  • 15.倒入铺油纸的烤盘中
  • 16.放入预热好的烤箱进行烤制,130度22分钟136度8分钟
  • 17.拿出来倒扣到油纸上,将上面的油纸掀掉
  • 18.然后再翻过来,将表面抹上草莓酱
  • 19.卷起来后固定放置一会儿,使其定型
  • 20.切成块(这次我切成大块的,儿子说这样吃之前再切小块不会干掉口感好)
