沙加蛋糕—烘焙食谱
沙加蛋糕是维也纳著名的巧克力蛋糕。蛋糕由两层甜巧克力和两层巧克力中间的杏子酱构成,蛋糕上面有巧克力片。它是代表奥地利的国宝级点心。

Steps to make 沙加蛋糕

  • 1. 原料详情;黄油130g、糖粉30g、细糖80g、蛋黄90g、巧克力120g、 低筋面粉130g、蛋白200g、
  • 2.装饰原料:黑巧克力100g、淡奶油100g、杏仁酱适量
  • 3.将蛋清和蛋黄分开备用;
  • 4. 将黄油软化后和糖粉搅拌至颜色微黄,
  • 5.加入蛋黄 快速打发
  • 6.将巧克力隔水加热至液态,加入黄油中;
  • 7.蛋白分次加入细糖,快速打发;
  • 8.打发的蛋白与黄油巧克力酱混合均匀
  • 9.筛入低筋面粉,由下至上翻版均匀;
  • 10.拌好的面糊装入模具;
  • 11.放入德普烤箱,焙烤档180度,烤制35min
  • 12.取出置凉后,脱模,中间分开,分成三片;
  • 13.每片之间夹少许的杏仁酱;
  • 14.将巧克力和牛奶隔水加热至液态,趁热淋在蛋糕上,冷藏至巧克力凝固即可
