    Steps to make 糖醋里脊

    • 1.里脊肉切粗条,约正常筷子粗细。
    • 2.加料酒、生抽,葱姜水和适量的盐抓均匀放置20分钟。
    • 3.磕入鸡蛋,放入1:1的面粉和淀粉拌匀。
    • 4.肉条全部裹上蛋糊。
    • 5.锅中油温6、7成热时转中火,依次下入裹有蛋糊的里脊肉,炸至肉片表面微黄时捞出。
    • 6.油温烧至8、9成热,下入肉片大火复炸半分钟左右,至肉片表面金黄,捞出控油。
    • 7.炒锅倒适量水,调入番茄酱,加糖和醋烧开(糖量和醋量,依据个人喜欢的酸甜度进行调制)。
    • 8.放入水淀粉勾薄芡。
    • 9.下肉条裹均匀芡汁,撒上熟芝麻。
    • 10.酸酸甜甜,外酥里嫩。
