芒果炼奶蛋糕卷

  • 炼奶少许
  • 细砂糖45克

Steps to make 芒果炼奶蛋糕卷

  • 1.蛋黄,蛋白分离,分别装入无油无水的容器中,蛋白中滴入几滴柠檬汁,加入糖,低速打发至湿性发泡。
  • 2.黄油加入水加热至黄油融化。
  • 3.晾凉后加入蛋黄。
  • 4.筛入低粉
  • 5.用蛋抽搅打均匀至无干粉。
  • 6.取三分之一的蛋白霜和蛋黄液翻拌均匀。
  • 7.将拌好的蛋糕糊倒入剩余的蛋白霜中,翻拌均匀。
  • 8.将拌好的蛋糕糊倒入不粘烤盘中(烤盘是28*28),轻轻的晃动几下,再用力震几下,震出大气泡。
  • 9.送入事先预热好的烤箱中层,上下火150度,45分钟。
  • 10.烤好后戴上隔热手套将烤盘取出,倒扣在烤架上,降温后脱模到油纸上。
  • 11.蛋糕体的一端斜切掉少许。
  • 12.挤少许炼奶。
  • 13.用刀抹平。
  • 14.铺上事先准备好的芒果片。
  • 15.借助擀面棍将蛋糕卷起,用油纸包好,放入冰箱冷藏定型30分钟以上。
  • 16.取出切件即可食用。
  • 17.当早餐或下午茶都棒棒的。
