Steps to make 肉丝炒蒜黄

  • 1.蒜黄清洗干净,根部有污泥不易洗净的部分用刀切掉;准备一块里脊肉或者瘦肉;
  • 2.肉切细丝,放少许淀粉抓捏上浆;
  • 3.蒜黄切寸段;
  • 4.温锅凉油,肉丝入锅,用铲子迅速划散,使肉丝浸润在油里,这样炒出来的肉丝根根独立不粘连;
  • 5.大部分肉丝变色,撒小葱段和少许酱油增香去腥,也可换成料酒去腥;
  • 6.蒜黄倒入锅中;
  • 7.撒少许盐,迅速翻炒,变软即出锅,余温还能让其进一步成熟。
  • 8.肉丝炒蒜黄,肉嫩菜香又开胃,百吃不厌!
