Steps to make 西芹虾球

  • 1.虾洗净去头和皮,用刀划开脊背至尾端,刀口深一些但不要切透
  • 2.撒少许盐搅拌这样可以使虾仁白亮,用清水冲净,再用厨用纸吸干水分备用
  • 3.拭干水分的虾仁放入碗中, 加入一点点盐,少许胡椒粉, 一点点小苏打(用食指和大拇指捏起来那么一小点)千万不能多, 一点点干淀粉拌匀
  • 4.半小勺的蛋清入冰箱冷藏2小时
  • 5.水淀粉中加入鸡粉搅拌均匀备用
  • 6.西芹洗净
  • 7.刀放平抹刀切成薄片
  • 8.切好的片如图
  • 9.锅坐水烧开加入适量盐和几滴油,西芹入开水中迅速焯一下捞出投凉控干水分备用
  • 10.如图码入盘底
  • 11.锅烧热入油烧热下入葱姜煸香,去葱姜不用留油备用
  • 12.锅中下入虾球, 煎到稍微变成粉色虾仁卷曲成球立即勾入水淀粉, 点一点明油关火
  • 13.倒在西芹上,锅中余汁也一并淋上即成
