自制黄豆酱

  • 黄豆300g
  • 大葱4颗
  • 大蒜4粒
  • 生姜1块
  • 香菜1颗
  • 甜面酱2勺
  • 豆瓣酱2勺
  • 生抽4勺
  • 香叶2片
  • 八角2个
  • 桂皮1块
  • 少许
  • 白糖1勺
  • 鸡精1勺
  • 高度白酒30ml

Steps to make 自制黄豆酱

  • 1.准备300克黄豆,把坏豆捡出来。
  • 2.用清水清洗干净。
  • 3.泡12个小时。
  • 4.泡好的黄豆放进锅里,加末过黄豆的清水,加香叶,八角,桂皮,盐,小葱和生抽盖上盖大火煮15分钟。
  • 5.煮好的黄豆捞出控干水分。
  • 6.准备辅料和空干水分的黄豆。
  • 7.小米椒和生姜洗干净切成末。
  • 8.锅中倒油,油温五成热将所有调料放进去,小火慢炸,所有调料炸的变成焦黄色捞出。
  • 9.将空干水分的黄豆放进去中小火翻炒。
  • 10.将尖椒末和生姜末放进去不停的翻炒。
  • 11.里面加2勺生抽,炒掉里面多余的水分。
  • 12.加两勺甜面酱和两勺豆瓣酱。
  • 13.不停的翻炒,直到里面多余的水分炒干净。
  • 14.里面加白芝麻翻炒均匀。
  • 15.加一勺白糖,少许盐和一勺鸡精翻炒均匀。
  • 16.加30毫升高度白酒翻炒2分钟。
  • 17.关火装盘。
  • 18.香辣过瘾超下饭。
