  • 澄粉100克
  • 葛粉40克(或栗粉)

Steps to make 肠粉

  • 1.起锅烧油,小火,下剁椒、蒜末、姜末煸出香味
  • 2.用碗盛出,加蒸鱼汁、生抽、蚝油、鸡精、蚝油、胡椒粉调成酱汁待用
  • 3.准备好两个不锈钢平盘
  • 4.猪肉、胡萝卜和蒜苗都切成末
  • 5.猪肉用淀粉抓匀
  • 6.起锅烧油,油七成热时,下猪肉末翻炒变色煸香
  • 7.下胡萝卜、米椒和蒜苗翻炒均匀
  • 8.加盐、鸡精、蚝油调味
  • 9.用碗盛出待用(馅料)
  • 10.鸡蛋磕入碗中,划散待用
  • 11.准备好粘米粉、澄粉、葛粉
  • 12.加水和油调成稀面糊
  • 13.起锅烧水,勺一勺面糊入平盘中(盘子用薄油刷一下),隔水蒸
  • 14.转动盘子,面糊能够摊平
  • 15.勺入一小勺蛋液,盖上锅盖,蒸2分钟,鼓泡就好了
  • 16.起锅,铺上馅料
  • 17.用铲子辅助卷起
  • 18.依次蒸完
  • 19.淋上酱汁(不喜欢辣椒的,也可以淋上少许生抽也可)
