Steps to make 炸茄盒

  • 1.肉馅加入葱花,一小勺盐,一小勺鸡精,半小勺十三香,半小勺姜粉,一个蛋清,一匙香油,一匙料酒和一匙酱油搅拌上劲。
  • 2.我的茄子个头较大,所以用了半个,切薄片,每间隔一刀切断,一定要薄,否则外面炸糊了,里面肉馅还没熟。
  • 3.用筷子把肉馅塞到茄夹里
  • 4.面粉里打入一个鸡蛋,分次加入清水搅拌成面糊,再加入适量盐,五香粉搅拌均匀。
  • 5.放入茄盒进面糊里滚一圈,能挂住面糊即可,如果太稀挂不住就再加些面粉搅匀,如果太干就加些清水。
  • 6.锅里多倒些油烧热,筷子放入周围起小泡时就可以下入茄盒了。
  • 7.把茄盒挨个裹好面糊下入油锅,保持中火加热,不时翻面。
  • 8.炸至两面金黄捞出。
