广式五仁月饼

  • 葵花籽160g
  • 葡萄干100g
  • 玫瑰花酱60g
  • 高度白酒30ml
  • 纯净水160ml
  • 玉米油90ml
  • 12g
  • 熟糯米粉245g
  • 转化糖浆185ml
  • 枧水6.5ml
  • 玉米油95ml
  • 中筋面粉280g
  • 蛋黄1颗
  • 纯净水10ml

Steps to make 广式五仁月饼

  • 1.烤好的广式五仁月饼
  • 2.白芝麻120g、榛子100g、南瓜籽160g、腰果160g、花生100g、葵花籽160g烤熟,备用。已150度分别烤熟。
  • 3.将坚果,切碎的葡萄干100g入容器内。
  • 4.加入玫瑰酱60g、高度白酒30ml、纯净水160ml、细砂糖160g、玉米油90ml、盐12g拌均匀。
  • 5.加熟糯米粉245g拌均匀。
  • 6.压拌好后覆盖保鲜膜醒发1小时。
  • 7.将五仁馅儿分成60g一只团圆备用。
  • 8.月饼皮:转化糖浆185ml、枧水6.5ml、玉米油85ml入容器内搅拌均匀。
  • 9.筛入中筋面粉280g拌均匀。覆盖保鲜膜松弛一小时。
  • 10.面团松弛好后分成20g一只团圆,备用。
  • 11.取一只面团压扁,放入五仁馅料,利用虎口慢慢收口,团圆。
  • 12.将包好的月饼胚码入烤盘内,
  • 13.模具压在月饼胚表面,用力要均匀,压出月饼胚,轻轻提起月饼模具即可完成一只月饼胚。
  • 14.表面喷少许清水
  • 15.送入烤箱已200度上下火烘烤10分钟。
  • 16.取出烘烤定型好的月饼,将蛋黄纯净水混合搅拌均匀过筛,薄薄的刷一层。
  • 17.送入烤箱已180度上下火烘烤15分钟。至表面金黄即可出炉。
  • 18.好吃又健康的五仁月饼就做好了。切开的组织依然棒棒哒~
