凉拌酸辣木耳

  • 1.材料准备好。
  • 2.木耳用凉水淘洗2遍,撒一小勺白糖(份量外)。
  • 3.倒40度左右的温水,盖上盖子,端起器具用力摇晃15秒,静置15分钟,可让干木耳变得舒展、滋润。
  • 4.泡木耳时来处理一下配料:青辣椒切圈、小葱切末、小米辣切圈、大蒜切末、半个洋葱切块。
  • 5.适量醋、生抽、5克白糖、2克盐、香而不辣的红油入大碗中,葱末、蒜末同入料汁,用筷子搅拌均匀;葱蒜提前放料汁可以充分释放出辣味和香味。
  • 6.这是泡发了15分钟的木耳,不比泡了几个小时的效果差,每一朵都舒展开了。
  • 7.将木耳入开水锅中再次煮开。
  • 8.捞出过凉水。
  • 9.将木耳控水捞入料汁中,搅拌均匀,静置15分钟,让木耳充分入味;可蒙保鲜膜放冰箱冷藏腌制,吃时更加爽口。
