Steps to make 鸡蛋灌饼

  • 1.面粉放入盆中,缓慢加适量清水,搅成雪花片,揉成面团,饧一会。
  • 2.生菜叶洗净,放入淡盐水中泡10分钟后,捞出沥干水。
  • 3.鸡蛋打入碗中,放入葱花和盐,拌匀。
  • 4.面团分成小剂,擀成薄薄的圆饼。
  • 5.刷一层花生油,用手将边缘捏起来,挤出里面的空气。
  • 6.再次擀成圆饼。
  • 7.平锅烧热,放入小饼,煎一会,在饼的周边沥少许油,晃一下锅。
  • 8.饼起鼓后,用筷子戳个小口,倒入鸡蛋液。
  • 9.煎3分钟后(蛋液凝固),翻面,周边沥一点油,两面微黄后出锅即可。
  • 10.饼上抹一些黄豆酱,放上生菜叶,可以开吃了。
