Steps to make 传统大肉丸子

  • 1.适量葱姜拍破切碎,倒入清水浸泡成葱姜水。
  • 2.2000g肥2瘦8的肉馅,加40g盐(每斤肉馅加10g盐)、5g五香粉、10g鸡精。
  • 3.倒入葱姜水。
  • 4.将两个馒头去皮,放干后搓碎,放入肉馅中。
  • 5.加入4个鸡蛋(每斤肉馅放1个鸡蛋)。再放入适量水淀粉。
  • 6.搅拌均匀,反复摔打起黏、上劲。
  • 7.锅中加油烧至六七成热,挤入丸子。
  • 8.定型后改小火炸熟。
  • 9.成品。色泽金黄,外酥里嫩。或蒸或烩或汤或配菜,美味方便。
