广式水晶虾饺
广东早茶必点的一定是Q弹鲜香的水晶虾饺,其实自制并不难,好吃不怕贵,一次可以吃个爽。

  • 澄粉100g
  • 玉米淀粉20g
  • 沸水120g
  • 猪油5g
  • 虾仁200g
  • 肥肉50g
  • 马蹄3个
  • 生姜1块
  • 胡萝卜1根
  • 半勺
  • 半勺
  • 麻油一勺
  • 胡椒粉少量
  • 鸡精半勺
  • 生粉1勺

Steps to make 广式水晶虾饺

  • 1.准备材料,生姜、胡萝卜、马蹄、肥肉都切成丁, 剩余的萝卜都切片。
  • 2.取2/3的虾仁在案板上剁成虾泥。
  • 3.虾泥混合姜、胡萝卜、肥肉、马蹄丁,加入盐、糖、白胡椒粉、麻油、生粉、鸡精搅拌。
  • 4.可以戴一次性手套来揉捏、甩打,让虾泥起劲。
  • 5.让所有材料融合在一起。
  • 6.把剩下的虾1/3切小段
  • 7.和之前的虾茸混合均匀,放冰箱冷藏15分钟。
  • 8.澄粉和玉米淀粉碗中混合。
  • 9.水烧沸一边冲入一边用筷子搅拌成絮状,先盖个盖子焖一下再揉。
  • 10.加入猪油揉成光滑的面团。
  • 11.将面团搓成长条再切成小段,大约15克每个。
  • 12.拿一个小剂子用刀背压薄。
  • 13.再轻轻掀起。
  • 14.放一块馅料,不要太多,皮没什么弹性容易破。
  • 15.像包子一样包起,留一口子。
  • 16.再捏连成饺子状。
  • 17.地下垫胡萝卜片防粘,水烧开后改中火蒸8分钟即可。
  • 18.晶晶亮的很诱人。
  • 19.一次吃个够。
  • 20.鲜美无比。
