  • 酥皮1张
  • 番茄酱50克
  • 海鲜酱30克
  • 蚝油10克

Steps to make 酥皮烤大虾

  • 1.大青虾8只。
  • 2.把青虾头尾分开,用刀在虾背开一刀,取出虾线【虾肠】。
  • 3.用刀在虾肉上斩几下,防止烤制时虾肉收缩卷起。
  • 4.在虾肉上喷一点料酒,撒一点胡椒粉和少许盐码一下底味。
  • 5.虾头汆一下水,防止搁置时间长会变黑。
  • 6.锅中放少许油,加入洋葱末,姜米和蒜米煸香,再加入一勺高汤【没有高汤加水】,再调入番茄酱、海鲜酱和蚝油,烧开收汁熬成调味酱。
  • 7.将虾子摆放在酥皮上。
  • 8.在酥皮上刷上蛋液,按虾形将其分开,虾肉上放上熬好的调味酱。放入烤箱190°c烤20分钟左右。
  • 9.烤好的酥皮虾。
