红烧小黄鱼

Steps to make 红烧小黄鱼

  • 1.红辣椒切小圈、去籽,将葱白段套入,用小刀将葱白划成丝状。
  • 2.小黄鱼去鳞、腮、肠后洗净。
  • 3.码入料酒、姜片腌制片刻去腥,捞出沥干水分。
  • 4.炸制前将鱼身涂抹一层食用油,防止掉皮。
  • 5.锅中适量油烧热,转至中小火下入小黄鱼煎制。
  • 6.待鱼皮定型后翻面,两面呈金黄捞出控油。
  • 7.锅中留底油,爆香葱姜片。
  • 8.调入六月鲜酱油1勺、红烧酱油1/2勺,烧至颜色红亮。
  • 9.倒入适量开水,大火煮沸。
  • 10.码入炸制的小黄鱼,转小火盖盖烧5分钟。
  • 11.将汤汁大火收干,撒入葱段、辣椒圈即可。
