茶叶蛋,著名汉族小吃,中国的传统食物之一,全国大部分地区都有该小吃。是煮制过程中加入茶叶的一种加味水煮蛋,因其做法简单,携带方便,多在车站、街头巷尾,游客行人较多之处等场所置小锅现煮现卖,物美价廉。可以做餐点,闲暇时又可当零食,实用和情趣都兼而有之。因为茶叶有提神醒脑的功能,故在烫煮过程中加入少许茶叶,煮出来的蛋便色泽褐黄。

  • 1.准备花椒和八角,加起来一共10g;鸡蛋清洗干净
  • 2.锅中加适量清水,放入清洗好的鸡蛋
  • 3.加入花椒和八角
  • 4.茶叶清水洗一下
  • 5.放入茶叶
  • 6.加入老抽和盐
  • 7.盖上盖子中火煮沸,煮沸后打开盖子,再煮五分钟左右
  • 8.将煮好的鸡蛋用勺子敲碎蛋壳
  • 9.敲碎后放回锅中继续煮,小火煮1个小时左右
  • 10.煮好后腌制一夜
