这是回美后的第一次做三椒鸡,有时都不知做什么好了,领导又挑食。天天做菜,反反复复,不是鸡就是牛,再就是猪肉,偶尔抓个虾。沉闷的重复,恼人的重复,可怕的重复。在家做菜的筒子们有无同感呢?以前做过,现在就简单地表一表做三杯鸡的过程吧。

Steps to make 三杯鸡

  • 1.两件鸡下装。
  • 2.一杯麻油、一杯酒、一杯酱油。
  • 3.葱、几只干辣椒(不放也可以)、适量姜和蒜、香菜。
  • 4.萝勒叶洗净。
  • 5.锅冷水和几片姜,放鸡块,水开几分钟撇开泡沫(尽量不用冷水冲),捞起。
  • 6.起锅,放几片姜,加4-5汤匙油,3-4汤匙砂糖,待糖烧成半褐色。
  • 7.立即倒入鸡块,迅速翻匀,盛起,我这是简单地过了下糖色,这样吃起来香,看起来色泽好。
  • 8.再重新起锅,放入姜茸蒜茸和葱头,爆香。
  • 9.再倒入过了糖色的鸡块,撒少少胡椒面,放麻油、酱油和酒,放水没过鸡面,慢火焖十分钟左右(看鸡块的大小来定),加萝勒叶,大火收汁,洒几滴烈酒,再放少少水淀粉让汁稍稠。
  • 10.另炉热瓦煲,记得在瓦煲底放少少油,这样瓦煲不会干烧。
  • 11.待煲热就放入煮好了的鸡,面上铺几条香菜。
