  • 高筋面粉175克
  • 牛奶115克
  • 细砂糖30克
  • 酵母2克
  • 2克
  • 黄油20克
  • 高筋面粉(液种)75克
  • 清水75克
  • 酵母1克

Steps to make 5°液种超软吐司

  • 1.混合液种全部材料,拌匀没有干粉状态,放入冰箱,冷藏发酵一晚;
  • 2.冷藏发酵至出现小气泡的状态;
  • 3.把黄油以为的主面团中所有材料和液种放入面包桶中,启动和面程序,揉至光滑加入黄油再搅拌至完全阶段,进行基础发酵,发酵面团至2倍大;
  • 4.面团排气,分割成3份,盖上保鲜膜,松弛15分钟;
  • 5.将面团擀成长条;
  • 6.上下对折;
  • 7.再擀成长条;
  • 8.由上往下卷起;
  • 9.放入吐司模中,注意先放两边,再放中间;
  • 10.进行最后发酵至8分满,盖上盖子,烤箱预热160度,烤45分钟。
