莲蓉月饼馅
做莲蓉馅和做豆沙馅做法都是差不多的,都要事先用水泡发食材,然后再放入锅里煮熟。为了让馅料口感细腻,煮熟的馅最好用料理机打一下,打好的馅再放入炒锅里按个人口味加入一些油和白糖炒干水分就行。

Steps to make 莲蓉月饼馅

  • 1.买回来的干莲子捡去杂质后,用水淘洗两次,然后放盆里,加入适量水,水量要没过莲子半指深,将莲子泡发六小时左右,也可以在临睡前泡好,泡发一晚。
  • 2.将泡发的莲子放入高压锅里,加入刚刚没过莲子的水量,将莲子压至熟烂。
  • 3.莲子煮熟后取出来,用料理机再打一下,这样做出来的馅料口感更细腻润滑。
  • 4.打至细腻的馅料倒入炒锅里,炒锅最好是不粘锅,这样炒的时候既省力也不会糊锅。
  • 5.用中小火不停翻炒,中途将110克玉米油分两、三次加入到馅炒里翻炒,玉米油不要一次加入,如果油脂太多,翻炒的时候油会溅出来会烫伤人。
  • 6.待油全部加完后,翻炒五分钟左右,接着加入麦芽糖翻炒。
  • 7.麦芽糖翻炒均匀后,再加入白糖翻炒。
  • 8.全程都一定要用中小火不停翻炒,炒馅是一件累人的事,可以让家里人帮忙,轮流上阵不停翻炒。
  • 9.500克的莲子炒馅时间大约需要一小时左右,感觉馅炒翻炒越来越费力,馅料已经能成团,这时分两次加入熟面粉翻炒均匀后就可以出锅了,加熟面粉的作用是让它更好的吸收馅料里的水分,只有充分弄干馅料里的水分,烘烤月饼的时候月饼才不会开裂或塌腰。
  • 10.炒好的馅料是这个样子,看着油油润润的,稍微用力捏一下才能成团。
