    Steps to make 口水鸡

    • 1.辅料准备:油辣子;(下面会详细说有哪些);碎花生米、葱段、姜蒜切片。
    • 2.鸡腿洗净入锅,料酒适量,加凉水没过鸡腿,大火烧开,煮净血沫。
    • 3.冷水冲洗,再次凉水入锅,葱姜适量,大火烧开,煮沸捞出(注:滚水不要倒掉)。
    • 4.再次冷水冲洗,放入沸水中,大火烧开煮沸,小火加盖烧5分钟,熄火焖10分钟。
    • 5.捞出鸡腿入冰块中,冰镇20分钟(冰块尽量全部覆盖)。
    • 6.冷油入花生米煎炸,搓去外皮切碎,备用。
    • 7.锅中油小火,加花椒5克、干辣椒10粒、八角2颗、桂皮一段、香叶2片,煸出香味后丢掉。
    • 8.碗中入辣椒面跟白芝麻适量,倒入香油即为油辣子,(香油:这里指香料干煸后的油)。
    • 9.鸡腿肉切成2cm的长条状摆盘,淋入调好的汁,撒上葱花即可。
